Composition: an ester oil
Roman chamomile oil is unusual among essential oils in being dominated by esters, mainly esters of angelic acid (such as isobutyl angelate and 2-methylbutyl angelate) and of isobutyric acid. These esters carry its sweet, fruity, apple-like note and are the main markers on a GC-MS report. It contains little or none of the chamazulene and bisabolol that characterise German chamomile, which is why the colour is pale; a strong blue colour would indicate German chamomile or a blend. Allergy and sensitive-skin positioning
Chamomile belongs to the Asteraceae (daisy) family, so people sensitised to other members of that family, such as ragweed, chrysanthemum or calendula, may also react to chamomile. For products positioned for sensitive skin or children, that belongs in the finished-product safety assessment alongside the declarable fragrance allergens.
Storage
Store sealed, cool and dark. Esters can slowly hydrolyse in the presence of moisture, which flattens the fruity top note, so keep containers dry and tightly closed.

- GC-MS profile with the main angelate and isobutyrate esters quantified
