Roman versus German chamomile
“Chamomile oil” covers two unrelated oils from two different plants, and the chemistry is not interchangeable. Roman chamomile (Chamaemelum nobile, syn. Anthemis nobilis), as on this page, is dominated by esters of angelic and isobutyric acids, which give its sweet, apple-like, herbaceous odour; it is nearly colourless. German chamomile (Matricaria chamomilla, syn. Chamomilla recutita) is dominated by alpha-bisabolol, bisabolol oxides and chamazulene; chamazulene forms from matricin during distillation and gives German chamomile oil its deep blue colour. The two carry different INCI names, and a formula built on the soothing reputation of bisabolol and chamazulene needs German chamomile, not Roman.
Substitution
So-called Moroccan chamomile (Cladanthus mixtus, formerly Ormenis) is a different, cheaper plant and is not a chamomile oil in either sense; it should not be accepted in place of Roman chamomile. What to ask for on the certificate of analysis
