Anethole Oil is a natural aromatic compound and essential oil isolate distilled from anise, fennel, or star anise, presenting as almost colourless when pure. Anethole is the primary flavour and fragrance molecule responsible for the characteristic sweet, licorice-like aroma of anise, fennel, and star anise — making it one of the most important flavour materials in both the food and fragrance industries. Its intensely sweet, warm, spicy-herbal character is widely used as a natural flavouring agent and as a fragrance component in personal care and home care products.

Natural, nature-identical or synthetic

Anethole is sold both as a natural isolate, separated from star anise or other anethole-rich oils by distillation and crystallisation, and as nature-identical or synthetic material. The molecule is the same, but the regulatory and labelling status is not: a natural or natural-flavouring claim needs documentation of the source, so ask the supplier to state it. trans- and cis-anethole

Commercial anethole is trans-anethole. The cis isomer is considerably more toxic and less pleasant in odour, so its level is a key specification point, together with residual estragole where the material is derived from natural oils. Light and air convert trans-anethole to cis-anethole and to anisaldehyde, so store sealed, full and dark, and check the certificate on older stock.

Handling

trans-Anethole melts at around normal room temperature, so it may arrive solid or partly crystallised. Warm gently and mix to a uniform liquid before sampling or dispensing. For flavour, oral-care and toothpaste use, the grade must be documented to food and flavouring standards.

What to ask for on the certificate of analysis

  • Source: natural isolate (and from which oil), nature-identical or synthetic
  • trans-Anethole purity by GC
  • cis-Anethole, estragole and anisaldehyde levels
  • Melting or congealing point, relative density and refractive index
  • Declarable fragrance allergens and a current IFRA certificate for fragrance use
  • Food or cosmetic grade, batch number and date of manufacture
