What is ergothioneine?
Ergothioneine is a naturally occurring derivative of the amino acid histidine. Its ring carries a sulfur atom, which gives the molecule its distinctive chemistry. It is also a betaine, meaning its amino nitrogen carries three methyl groups.
The name comes from ergot, the fungus from which the compound was first isolated. Ergothioneine is often shortened to EGT in trade literature.
Where it occurs in nature
Fungi and certain bacteria make ergothioneine. Humans do not make it and take it in from food. Edible mushrooms are the best-known dietary source, and levels vary between species.
Commercial ergothioneine can be extracted from mushroom material or made by other routes. The route matters, because it shapes how a brand may describe the ingredient on pack.
