What the L in L-ergothioneine means
Ergothioneine has one stereocentre, at the carbon that carries the amino group. Molecules like this exist as two mirror-image forms, labelled L and D. The form made by fungi and bacteria is the L-form, built from L-histidine.
Mirror-image forms share the same formula but are not interchangeable. A chemical route can give a mixture of forms unless the process controls stereochemistry. For that reason, the L-designation belongs in the specification, not only on the label.
Identity in a specification
A name alone does not prove identity. A complete specification states the chemical name, the stereochemical form, the assay and the method of production. For an extract, it should also name the source species and any carrier.
