Spray-dried, agglomerated or freeze-dried
Instant (soluble) coffee is made by brewing roasted coffee at industrial scale, concentrating the extract and drying it. Spray-dried powder is fine and economical; agglomerated powder has larger granules that dissolve more easily and look like premium coffee; freeze-dried coffee keeps more aroma but costs more. The bean blend (Robusta, Arabica or a mix) and the roast level decide the taste and the caffeine content.
Food safety checks
Roasting forms acrylamide, and coffee beans can carry ochratoxin A, a mycotoxin. Several markets set limits or benchmark levels for both in soluble coffee, so ask for test results on each lot. Instant coffee is hygroscopic and cakes quickly when exposed to air; keep packs sealed and dry.
Formulation notes
For 3-in-1 mixes, instant coffee is blended with sugar and a whitener such as Non Dairy Creamer; for foamy cappuccino styles, Foaming Cream Mokate CB6 is added. Products with a high caffeine content may need a caffeine statement on the label in some markets. Ask for the caffeine content of each lot.

This ingredient is listed as “Instant Coffee Powder” on FC Materials’ Halal certificate (Sijil Pengesahan Halal, MS 1500:2019), issued through the Penang Islamic Religious Council (MAINPP) and the Department of Islamic Development Malaysia (JAKIM). What to ask for on the certificate of analysis
- Bean type (Robusta, Arabica or blend), process (spray-dried, agglomerated or freeze-dried) and roast
- Caffeine content, moisture, solubility and bulk density
- Acrylamide and ochratoxin A
- Heavy metals (lead, arsenic, cadmium, mercury)
- Microbiology: total plate count, yeast and mould, E. coli, Salmonella
- Batch number, manufacture and retest dates; compliance with the food additive specification of your market (for example JECFA or the Malaysian Food Regulations)
